1 cup Long Grain Rice
3/4 cup Frozen peas
5 Spring Onions
2 Tablespoon Sunflower Oil
6 Strips Bacon
1kg Pasta Sauce
1 Red Red Capsicum Deseeded and chopped
2 cloves Garlic
2 large eggs Eggs
1 teaspoon Dried Chilli Flakes
1/2 teaspoon Salt
1/2 teaspoon Black Pepper

Vegetable and Bacon Rice

Simple rice dish with bacon

    Simple vegetable and Bacon rice dish, great meal for family and friends.

    1. Cook the rice according to the packet directions. Add the peas 5 minutes before the end of the cooking time. Cover and set aside to cool.
    2. Meanwhile, using a sharp knife, cut the onions into 5cm pieces and then into very thin strips. Immerse the onions in a bowl of iced water and leave until curled, about 5-10minutes.
    3. Heat the oil in a large frying pan or wok. Add the bacon and stir-fry for 2-3minutes. Add the red capsicum and garlic and stir-fry over medium heat for 3minutes. Pour in the eggs and stir-fry until just set. Add the cooled rice and peas
    4. Stir in the five-spice powder and heat through. Drain the onions and add to the rice mixture. Season with the salt and pepper and serve.
