1 cup Long Grain Rice

3/4 cup Frozen peas

5 Spring Onions

2 Tablespoon Sunflower Oil

6 Strips Bacon

1kg Pasta Sauce

1 Red Red CapsicumDeseeded and chopped

2 cloves Garlic
-
2 large eggs Eggs
-
1 teaspoon Dried Chilli Flakes

1/2 teaspoon Salt
-
1/2 teaspoon Black Pepper
Directions
Simple vegetable and Bacon rice dish, great meal for family and friends.
- Cook the rice according to the packet directions. Add the peas 5 minutes before the end of the cooking time. Cover and set aside to cool.
- Meanwhile, using a sharp knife, cut the onions into 5cm pieces and then into very thin strips. Immerse the onions in a bowl of iced water and leave until curled, about 5-10minutes.
- Heat the oil in a large frying pan or wok. Add the bacon and stir-fry for 2-3minutes. Add the red capsicum and garlic and stir-fry over medium heat for 3minutes. Pour in the eggs and stir-fry until just set. Add the cooled rice and peas
- Stir in the five-spice powder and heat through. Drain the onions and add to the rice mixture. Season with the salt and pepper and serve.
