A great tasty potato dish. Mashed potatoes with a touch of roasted garlic.

  1. Preheat oven to 190°C. Peel potatoes and cut into even-sized pieces. Place a large pan of lightly salted water. Bring to the boil, then reduce heat and simmer until they are cooked through, about 20minutes.
  2. Meanwhile, separate garlic cloves, but do not peel them. Place in a bowl, add olive oil and toss to coat. Place on a baking tray and roast in oven until softened, about 10 minutes. Allow to cool slightly.
  3. Drain potatoes and return to pan. Mash slightly. Add sour cream and butter. Quickly squeeze pulp from garlic cloves into pan. Add salt and black pepper.
  4. Mash potatoes until combined and smooth. Transfer to a serving bowl. Cut chives into small pieces. Sprinkle over mashed potatoes in bowl; serve.
