Directions
Juicy Pork Roast
- Preheat oven to 190°C. Melt the butter in a large frying pan. Add the onion and cook over medium-low heat for 5 minutes. Core and chop 1 apple into 5mm pieces. Add the apple pieces to the pan and cook, stirring occasionally, for 5 minutes. Remove from heat. Stir in the breadcrumbs, chopped sage, salt and pepper. Set aside.
- Untie string if pork is tied. Make shallow cuts across the skin 1cm apart. Turn the meat over and make one deep cut in the center to create a pocket for the stuffing. Spoon in the stuffing and re-tie the porn loin with kitchen string.
- Place the pork in a large roasting pan. Rub the oil onto the skin, then rub with the sea salt. Roast for 1 hour 45 minutes.
- Slice the 2 remaining apples. Place apple slices and whole sage leaves around the pork. Roast for 15 minutes longer. Toss the safe and apple slices in the juices in the bottom of the pan, then transfer everything to a serving plate. Cover loosely with foil to keep warm. Allow to rest for 20 minutes. Slice the pork and serve with apple slices and sage.
